Delicious and easy-to-make rainbow fruit skewers are made with five different types of fresh fruit. As an option, drizzle with milk or dark chocolate.  Not only are these healthy snacks, but they are kid-friendly to make and eat. Everything you’ll need to make fruit skewers

To make rainbow skewers, you need only a few simple ingredients:

 

Bamboo Skewers

Strawberries

Orange

Pineapple

Banana

Kiwi

Optional: your favorite dark or semi-sweet chocolate bar and a sprinkle of flaky sea salt.

Try mixing and matching various fruits.

  • In place of strawberries, use red apples, raspberries, cubed watermelon, or red grapes.
  • In place of pineapple & orange, use mango, cantaloupe, and peach chunks
  • In place of kiwi, use green grapes and honeydew melon
  • For extra blue or purple, use blackberries, blueberries, or purple grapes

(If using apples, dipping them in lemon juice will prevent browning)

 

Another option is to grill the fruits before drizzling them with chocolate (if used)

 

Ingredients

 

Six strawberries, hulled.

One orange, peeled, segmented, and cut in half

½ of ripe pineapple, peeled, cored, and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)

One banana, cut into 1-inch sliced

Two kiwi fruit, peeled and cut into 1-inch chunks

1 bar of semi-sweet or dark chocolate, vegan or dairy-free if desired

Optional: flaky sea salt

Instructions

 

Arrange fruit on wooden skewers. I like adding them in rainbow order: strawberry, orange, pineapple, banana, and kiwi. Place the skewers on a large plate or baking pan lined with parchment paper or wax paper.

 

Break up the dark chocolate bar into pieces and add it to a microwave-safe bowl. Microwave in 30-second intervals, stirring in between until the chocolate is melted.

Drizzle the melted chocolate over the fruit kabobs and sprinkle with flaky sea salt if used.

Place the plate of kabobs in the freezer for 5 minutes or until the chocolate hardens. Enjoy!
